In fact the name of the brand NOCERBIA derives from the three viarietà of olives used:

- CERasuola
- BIAncolilla
Val di Mazara (DOP) is an olive oil with protected designation of origin that is produced in all the municipalities of the province of Palermo and in the following municipalities of that of Agrigento: Alessandria della Rocca, Bivona, Burgio, Calamonaci, Caltabellotta, Cattolica Eraclea , Cianciana, Lucca Sicula, Menfi, Montallegro, Montevago, Ribera, Sambuca di Sicilia, Santa Margherita del Belice, Sciacca, Villafranca Sicula.
To be considered a DOP oil of Val di Mazara the product for at least 90% from: Biancolilla, Nocellara del Belice, Cerasuola, single or together.
The maximum production of olives per hectare must not exceed 8000 kg in specialized olive groves and 6000 kg in promiscuous olive groves. The harvest takes place from the veraison and lasts until December 30 of each year. Olives must be pressed within two days of collection.
When released for consumption, the product has a golden yellow color, with hints of intense green, fruity aroma, fruity taste, velvety with a sweet aftertaste.
